Well the good news is that I am down a pound from
yesterday. The bad news is that I just got up and I do NOT
want to eat a potato!!!! I may stick to my oatmeal for
breakfast and do potatoes for the rest.

Food yesterday...

2 potatoes
1 sweet potato
bowl of oatmeal with a apple and cinnamon
large leafy green salad
peas
cauliflower
fresh cut pineapple

I am going to see if I can do this thru the end of the month :D

Just re-upping to the plan 'again' today.

Breakfast - hashbrowns, ketchup,1/2 grapefruit
Lunch plan - baked tater, cuke slices
Dinner - sweet potato, salad
snacks - carrots, celery, apple

is that plan acceptable to this challenge?

Everything is acceptable! In fact, potato hackers never ask permission to do anything! We eat starchy, carby potatoes and don't care what society thinks!

I don't need a challenge to eat lots of taters--it's a VERY rare day when I don't have them at least twice a day and often it's 3X!

Yep - we are so bada$$! :)

My intake today:
B - a couple carrots, and a potato -- both plain
Sn - 2 bananas w/ brown spots, that a co-worker brought in so that they wouldn't go to waste. Was happy to eat them for her!
L - more potatoes, more carrots, dunked in ketchup
D - more potatoes, more carrots, plus a whole butternut squash
Sn - I have one more baked potato and will probably eat it before the evening is up!

Comment:
It sounds like I cheated on my beloved potatoes with the butternut squash, but really I was ending the affair. I had purchased the squash *before* the potato hack, and I just didn't want to leave her dangling like that! :)

TODAY'S BADAZZ FOOD:
B: baked potato with saute'd onion and pepper
L: banana
D: repeat of breakfast.

I may eat again, because dinner was very early.

If so, it'll be a baked tattie with...hmmm....prolly saute'd kale and onion over it.

If I was not already stuck at work for the day with my food packed I would certainly join in!

I'm with eppy: did NOT want potato when I woke up today. BUT i did have one. A baked russet, cold, cut in spears like ranch fries, and dipped in ketchup and mustard.

The mustard was good. :lol:

yup, I didn't think it would happen, but I am tired of potatoes...or let's say...I'm tired of the dang potato salad I made at the beginning. Ugh. I made buckets of the stuff, and now have to finish it off. That should happen today though.

Meanwhile, colcanon does still sound good, so not all is lost. ;) Hashbrowns, too. So maybe it isn't potatoes that I'm tired of...more likely, it's the potato salad. And that may be because it's a cold dish.

stepping on the scale on Sunday and because it is Easter, I will eat a hard boiled egg. One. and the eggs come from my friend's pet hens that scratch around in her yard, so no egg industry cruelty involved.

and I may or may not go back to potatoes after Easter. And until then, I remember that Sunday is on the horizon. This potato hack is temporary THANK GOD.

Fell off the potato cart yesterday. One little slip.

B: hashbrowns and BBQ sauce
L: mashed potatoes with mixed veg
S: 2 small sweet potatoes
D: sushi (I needed rice!)

Plus, the Asian flavors don't go as well with potatoes.
I'm back on the potato cart today and tomorrow!

B: 2 baked potatoes
S: one large yam
L: purple potatoes with asparagus and mushrooms
D: potato cabbage curry

I cook the potatoes until they are almost done.
Then I saute some onion until soft, add a TB or 2 of curry powder, one half or a whole cabbage, and a carrot or two, chopped. Saute until almost done. Add the potatoes and blend the flavors. Add some green peas. Done!

mmmm now see? This sounds really good, like a samosa filling almost, with those peas in it. I may give it a try.

I still have been doing the potato challenge but to busy and forgetful to post the past couple days....

Yesterday I boiled a huge pot of potatoes. I may have overcooked them so It is kind of like a mashed potato salad. I put in some steamed kale and fresh lemon juice. Lemon juice makes the cold potatoes really refreshing. I chopped up a cucumber and sprinkled that over some of it yesterday. I also ate a big sweet potato and about ten dates, and a kombucha tea.

I also found out a couple days ago that peanut butter tastes really good on baked potatoes. But that is just dangerous for me and not MWL so I am hiding the PB.

I wouldn't mind some other starches. I am looking forward to making some einkorn wheat berries this weekend and having some rice, and also some oatmeal. But I still am not sick of potatoes! I am getting some great ideas here for ways to flavor those taters. Vgpedler's meals always look pretty good.

I don't use the vinegar, no good! I just saute in water. I also find it easier to steam the potatoes until almost done and add to the veggies later to make sure everything is done at the same time.
