Woo-hoooo -- weighed in this morning and I'm down over a pound! :-) I think my new regimen of a veggie-starch breakfast is paying off because I'm feeling less hungry -- and less snacky -- throughout the day. (I do miss my oats, though.)

Working on keeping my food "good -- but not too good". That works for me. I'm a volume eater so as long as what I'm eating is reasonably tasty and there's a lot of it, I'm good to go. :)

^ This is helping me stumble through my workouts with the weights... because right now it ain't looking too pretty ;-)

I seem to have been skipping dinner the past few days. I'm not doing this deliberately, I've just been filling up at lunch with giant portions and this has been holding me over until the next day.

Exercise: Rest Day

Agghhhh -- shopping day, low on fresh green veggies so had to improvise with this curry which is just too delicious! It's spicy and creamy and sweet.... too many fireworks there. I don't trust myself not to overeat. :( The curry that works like magic on my appetite is cauliflower + cabbage + white potatoes.... it's tasty but not insanely good and more calorie-dilute so I can eat the volume I need. I'll stick with that from now on.

Exercise: 24 mins NordicTrack, 20 mins Weights

The potato salad came out pretty good. It was cold chopped potatoes, onion and celery with this for a dressing, blended till smooth: 1 drained can white beans, 1 clove garlic, 1 peeled zucchini, 3 dates, 1 TB mustard and nooch and lemon juice. To taste I added salt, pepper, dill, celery seed and parsley. Not bad!

Ah, the potato waffle!! How did I live before this culinary delight -- ? When I think of the weeks I did on potato minis without them.... it makes my heart hurt. :-D It's a really nice bread substitute too, you can use it as a base for spreads or with something lighter like a soup or salad meal. Anyhow, it's really simple -- I saw a video on YouTube and told my son about it, he's been making these for weeks and raving about them and I finally tried one! Just get a potato, microwave it, then cut it in half and smash it on a waffle iron. Let it cook for 15 minutes.... and voila! Sweet crunchy waffle perfection. My son keeps asking "are you sure it's healthy??? It's too good!" I agree. :)

My weight doesn't seem to be going down and I've still got at least 40 lbs to lose. I've decided to try an experiment and go super super simple for the next week and see if that makes a difference. The temptation is to do something drastic like a Mary's Mini or a potato fast.... but these aren't sustainable for me for the long haul and I'm just tired of doing them. So I'm going to try shaking up my diet and trying to do LESS fancy cooking and see if I can reignite my weight loss.

My motto for the next 7 days will be: keep it simple. Less delicious recipes, more plain veggies and rice and potatoes. I'll try those SNAP meals. I think it's the pleasure trap, I think I'm caught up in it.

So this is my challenge, then: no salt, no condiments, none of my delicious homemade salad dressings or sauces....nothing but plain cooked veggies and rice and potatoes. And fruit, 2 a day max.

It should be an interesting week, whatever happens. :)

Ugghhh -- I forgot that I went grocery shopping recently and stocked up on salad supplies! This is going to be really challenging because salad is *not* what I was thinking of eating this week. For today, I made up a SOS-free "sort-of-ranch" dressing by blending up the following:

1/2 cup rolled oats
1 cup water
1/4 cup lemon juice
1 peeled zucchini
2 dates
2 cloves garlic
2 Tbs dill
2 Tbs onion powder
ground pepper

It was just okay. Think tomorrow I'll try making a Mexican salad w corn, beans and salsa.

Final note: I ate a ton of food today. :shock:

Exercise: Rest day

Up 0.2 lbs from my loss of last week but I figure this is just natural daily fluctuation and I'm not sweating it. What bothers me is that I've reached a "behavioral equilibrium". My results are due to my behavior -- and right now my behavior equals just about a pound loss in the past 5 weeks and I'd like to do better.

I'm going to be simplifying as much as possible and cutting back on sauces and condiments. I've hit a snag on the salad dressing issue. I'd rather skip salads entirely right now, but I've just stocked up on salad fixings. Today I'll try using plain balsamic vinegar on my salad.

I'm also back to having oatmeal again -- because it still tastes good without salt or sweeteners. :D

WOOO HOOO already down a pound this morning! :-D 169.8 -- finally broke into the 160s!!! Really happy as it's been a big goal. I take this as a sign to continue this way: super simple, no sauces, no salt.

Okay, I don't normally weigh myself every morning, but this is a special experiment week :-D So there's another pound gone this morning -- of water, I'm sure. But I'm feeling smaller and less bloated -- so whatever it is, I'll take it!

I had no idea I was such a slave to salt! :shock:

I just want to get back down to a healthy BMI. I'm realizing there's nothing I won't give up to get there. The truth is, I love food and natural whole food is fine with me. And I don't feel right if I'm not exercising regularly, never have. This whole lifestyle just feels like a return to my natural default settings. :)

Monday 4/10/17:

Here's what's in the veggie soup if anyone's interested -- inspired by Yomom's thrown-together Instant Pot veggie soup :)

28 oz can no-salt diced tomatoes
12 or so cups of water and veg broth combined
1/2 cup red lentils
2-4 cloves garlic
1 chopped onion
1 chopped zucchini
a few chopped mushrooms
1 stalk celery, chopped
1-2 cups frozen corn
2-3 cups each chopped green cabbage, kale and yellow potato
1 tsp or so each cumin, thyme, black pepper, red pepper flakes. I also added in liberally: onion powder, garlic powder, nutritional yeast, ground red pepper

I never imagined I'd like a soup without salt -- but I really love this soup. It's filling and *good enough*. I can tell it's going to be a staple while I'm on the MWL plan. :-D

Today marks 3 months I've been on MWL. :-D

So far, I've lost 15.6 pounds. I also feel so much better! I think I look younger, too. When I decided to go off-plan and buy some wine on my birthday, I got asked for ID -- and seeing as I turned 55 this year, I was duly flattered. :)
