Whole wheat pasta is today much easier to find than in the past. I can find whole wheat spaghetti, penne, rotini and vermicelli even here in Mexico. I enjoy pasta once or twice a week. Today, after shopping yesterday, I start cooking marinara sauce. Kids will probably eat spaghetti with sauce. I will add vegetables and lentil-rice-oat burger chunks to mine. I freeze any extra sauce.
We also enjoy potatoes, through. Mashed potatoes and gravy is a kids favorite, and I enjoy shepherd’s pie with more veggies.
Cultures ate what was locally available. Warmer locations can grow wheat. Cooler locations can grow potatoes. With the addition of small amount of fruit or vegetable, wheat is equivalent to potato. Calorie density is similar. (Unlike bread, which has higher calorie density.) Whole grain flours are more processed, but have been used for hundreds of years.
