Rice

I usually have about six cups of rice per day.
Is this too much given the arsenic content?

I think personal choice because "who knows"? Look at the demographic stats for arsenic driven cancer spikes in China, Japan, etc where that's the foundation of nearly everyones' diet...

I wouldn't eat that much, but if you're going to, I would make sure you're cooking it in the reduced-arsenic manner: that is, in a pot of lots of boiling water, like pasta.

I would also start with a low arsenic rice so you minimize your intake. Look for California rice.

Right, good point. I read that California and Thailand are the best for lower arsenic content.

I like other grains, too, but rice is my fave, so I still do eat some of it, just not nearly as much, and I try to be conscientious when I'm cooking it to use the pasta method.

Six cups of rice gets you anywhere from 1200 to 1600 calories, depending on the type of rice (you didn't specify).

Are you sure you want that much of your daily calories from just rice?

IMO, that's a more important question than the one about arsenic.

I did a do-it-yourself test following the CR report a few years ago. Cooked Brown Thai Jasmine was well below the cutoff for acceptable level in municipal water supply.

Here’s my opinion:

That seems like a reasonable amount of rice, 2 cups at each meal, plus presumably another 2 cups veggies. To minimize arsenic exposure, use California or Thailand rice and/or cook pasta-style.

I usually have rice once a day. My current stock includes sticky brown rice, Lundberg short grain brown, white sushi rice and Trader Joe’s white jasmine.

I agree with the point Geoffrey Levens makes. If rice has too much arsenic then why doesn't it have any effect on Japanese and Chinese. They have lower rates of cancer.

Where is a good place to get Californina rice?

Most major grocery stores carry California rice. Lundberg is the most popular brand. The bag will say the location.

My problem with Lundberg is that I’ve been unable to find it in large packaging, e.g. 5 lb. and they’re unresponsive to email inquiry.

Do you have a local health food store? Any place with the bulk bins will get it in 25 lb bags. I know Whole Foods offers a 10% discount if you buy the whole bag. You can special order it, and possibly even get varieties that the store doesn’t regularly stock.

2 cups of rice, 3 times a day? That's one spartan diet. And at 1600 calories a day, that doesn't leave you much room to eat other foods.

I disagree. If you eat another 3 lbs of veggies, that’s only about 300 cal, which puts you at 1900. I’m a pretty tiny person and could clean that up. If the person is a man who is active, that would be totally doable.
