Anti-oxidant Capacity of the Russet Potato

Sometimes the potato gets a bit of a bad publicity, which it does not deserve. I was Wikipedia'ing some information trying to find the name of a certain phytonutrient and came across this chart.

Take a look at #17 on the chart. The good old russet potato has 1/3 as many anti-oxidants as the legendary blueberry!

It's also interesting to note that 5/20 items on that list are starches.

..Also of note is that three of the top four are varieties of beans. Red kidney beans are way up there.
I'm eating beans and potatoes as i type this.. :nod:

then take into consideration how many potatoes one can eat vs blueberries vs cost :)
