I remember my mom making some of those dishes. And it wasn't the depression. Whatever she was eating over 93 years seems to have left her in good health.

Had to laugh when she said they were fat as kids because they ate a lot of potatoes. It wasn't the hot dogs, eggs, cooking fat and all the fried food etc that made you fat, it was the potatoes.

If you scroll way down, she has one video "how to make couscous" that could be fat free by simply leaving the butter out.

On a related note, potatoes can still be found for a dollar per 10-pound sack.

Unfortunately she passed away in 2013 :crybaby:

I know each one of us reaches the end of our lives, but I feel really sorry when I think of the huge amount of experience and knowledge that passes away with these people. And I also feel very sad because most of the younger people think these information are outdated, which is far from the truth I think.

Most likely she was talking about a 50 lb sack. You could find 50 lb of potatoes for $2.00 in the late 50's.

Thanks for posting! I loved the videos, very moving and instructive.

I made the "Poor Man's meal" for my dinner yesterday. It was simply no oil fried chopped up potatoes and onions with some veggie broth at the end. I added some frozen veg and spices and a bit of barbeque sauce (I omitted the sliced hot dogs). It was incredible how much food 3 red potatoes, 1 large red onion and some frozen veggies expanded. Delicious! I had two v. large plates full of food. Every day I still can't believe I can eat this way and be slim and healthy--a true miracle.

I love fried potatoes and onions. But I haven't figured out how to brown potatoes without oil. They stick to the bottom of my "non-stick" pan. I guess I could spread them out on a cookie sheet and broil them in the oven.

It seems to depend on the pan. My ceramic one was useless so I've invested in some Circulon ones. Not sure which countries their brand is available in but I'm sure others will give recommendations.
I find the pan takes about 10 mins to heat through evenly as it's fairly heavy, but after that I turn the veg over every 3-5 mins and they brown well without oil. I found it best not to add any liquid or things turn to mush.

Some people get good browning results using a waffle maker or electric griddle.

I have found that I don't really crave browned food any more, so I stopped trying to do it.

My potatoes taste just as good anyway:).

Me too. I make a dish similar to this for breakfast sometimes. I sauté chopped onion and peppers until they're as done as I like, then add a can of black beans and chunked cold, cooked potato and heat through.

Thanks, I'll try sautéing instead of frying. Peppers are always a nice addition too as I recall.
