Thanks for sharing Becky. I really enjoyed reading that. Kudos to your husband for regaining his health. It is very hard to commit 100% and never ever cheat again. I am still a work in progress but I have made tremendous improvements. Hope you are enjoying your weekend and look forward to your next creations. :)
On 7/8/2013, I decided to change my diet to a "mostly" WFPB diet. I have always been somewhat lean and muscular due to being a lifelong exerciser. Change in diet due to feeling crummy all the time despite a healthy outward appearance. Image

All great looking recipes Becky. I think I could find some interesting uses for the Chocolate Sauce besides just strawberries :D . That salad looks esp. good too. It puts my bland simple looking iceberg lettuce salads to shame. Thanks for sharing!

Thanks eXtremE! The chocolate sauce found it's way onto some banana "ice cream", too!! :)
My banana "ice cream" is nothing more than frozen bananas blended smooth in my Vitamix. Yum!

Great job Becky! I feel inspired by the tofu fritata, that would be great with the fresh garden peas, asparagus and spring spinach in season right now in the UK. I'm guessing firm silken tofu? Thanks for checking out my blog, and your kind words! :) I'm having a lot of fun with this project, and at the rate I'm going, it should keep me busy for years to come, LOL! :eek:

Oh yeah, the frittata would definetly be delicious with fresh garden peas, spinach, and asparagus, it's making my mouth water thinking about it, ha! Actually, this recipe called for regular tofu, which sort of surprised me too, I would have guessed silken, but it turned out to be just right in terms of consistency.

I'm not 100% sure how to sign up to get email notifications for my blog updates. I know on the bottom of the home page you can become a "follower" of the blog by signing up through a google account, but I don't know if this acutally ends up giving you email notifications. Maybe someone who is already following my blog can comment on this?

I'll look into this a little bit more and see what I can come up with!

Hi again! Just wanted to let you know, I was able to find a gadget to add to the home page of my blog that allows followers to sign up to follow posts via email. Followers will receive an email each time I add a new post, but nothing else (no other emails). I added my own email to try it out, and the process seems to be working! :)

I have been on the hunt for a sandwich filling that I could make on the rare occasion I felt like a sandwich and decided to give the Muffaletta sandwich a try after you posted. Yum!

I did make some adjustments to the filling after the initial mixing. I too simply ignored the oil and vinegar additions stated in the recipe. I will reduce the pickled pepper amount next time as her version was a bit too spicy for me. So to help with the heat this time, I added a 540ml/19 oz can of drained and rinsed white kidney beans to the half recipe I had made. Now I had a salad and sandwich filling! Extra yum!

This makes my list of treats that are extra spiffy! Thanks for sharing Becky! :nod:
