Can't believe how long between posts, but life has just been happening, and priorities shifting. However, I haven't totally decided to give this project up yet, so here are a couple of recipes I've tried recently, and not so recently... :eek:

Hi Birdy! Nice to hear from you again! :) Thanks for visiting and enjoying my blog posts, I appreciate that. Wow, thanks for the compliment, too, sweet of you to say. :o I'm going to try to be more consistent with the 1000 Blog, and trying to catch up on my travel blog as well. Sometimes the doing gets in the way of talking about the doing, lol! :lol: We really loved our Oregon visit, I'll have a few more posts from the rest of our stay in that area coming soon.

Mmm, I wondered what I was going to do with all the loot I brought home from the Asian market (including several varieties of noodles and a couple varieties of mushroom)...and I also have a pound of asparagus bought at the regular store...and I DO have Chinese black vinegar in my pantry!

Hi Becky,
I think I've mentioned before that my copy of Robertson's 1,000 Vegan recipes is starting to fall apart I've used it so many times. Most recently I made her cashew sauce with penne pasta and broccoli that I cooked together in the same pot. Served it with some cherry tomatoes and sliced carrots. So simple and delicious. I really like that cashew sauce because there's no added fat. Also, my husband, whose favorite meal is fettucine Alfredo, loves Robertson's cashew sauce with pasta. Win win!

Tonight we go out to dinner with friends. But tomorrow night at home, I'm making your version of the perfect springtime dinner Szechuan Sesame Noodles with Asparagus. Yum! Thanks : )

Hi Birdy! I know what you mean, my book is also falling apart, my husband had to glue the binding together for me once already, ha! I’m so worried I might have to replace the book and transfer all my notes on the almost 500 recipes I’ve tried so far, yikes!

How nice both you and your husband agree on the cashew sauce penne pasta, and with no added fat, it is a win-win. Nice additions you made too, with he cherry tomatoes and carrots. Let me know how you like the Szechuan Sesame Noodles with asparagus, great time of year for anything asparagus!!
