I have always been thin and very active. My Cholesterol was always high too. When my second child was about to be born, the doctor noticed how close to 300 it was. He mentioned that I might want to keep an eye on it. So, I ignored it. One night, a few years later, I woke up very ill and went to the ER. I was so very anemic, though eating quite a low carb diet at the time (high protein is said to have adequate iron).
I went home, just barely escaping a blood transfusion, with prescriptions and two months worth of monitoring, and with the message that my condition may be caused from cancer. I went two weeks thinking I had cancer. My condition was monitored, not improving much and the doctors telling me that I needed to eat liver three times per week. At the same time, my father had a heart attack in his late 60’s and a coworker was diagnosed with breast cancer. My father survived, but my friend did not. I had never thought about health so much as I did then.
It was during this time that I saw Forks Over Knives. I turned to my husband and said “That is it. We are vegan.” And we threw out all meats and dairy on that day. I am healthier and happier than ever and see no return to the meat eating days. My entire family has become vegan, including my teen son and 11 year old daughter.
I have now completed my Master’s degree in psychology (going for my doctorate, all but dissertation) and have taken the eCornell Plant Based Nutrition class from T. Colin Campbell, and the Forks Over Knives cooking school. Dr. McDougall’s class is just the latest wonderful jewel in my goal to help people take back their health and their lives!
