This was a 'hurry' lunch -- meaning, I didn't make dinner last night, so no leftovers for lunch today. Instead, I whipped up some hummus (oops - forgot the cumin and needs more garlic!) and packed veggies into my bag. Today, putting it together it looked like this:
Arabic bread (bottom)
Spread of hummus
Thinly sliced tomatoes
Thinly sliced cucumbers
Thinly sliced orange sweet pepper
Arabic bread (top) with hummus
Cut into wedges and eat. Filling, delicious and quite easy too!
1 can garbanzo (chickpeas), drained and rinsed
garlic granules to taste (sometimes 4-5 cloves of garlic)
splash of lemon juice (sometimes lime)
cumin (1/4 tsp. usually - forgot it this time)
Everything goes into the food processor and whizzed. Consistency is dependent on the taste at the moment. If I want thinner, then I simply add water slowly until I get where I want it to be.
