I know I have asked this a bunch of times over the years, but I am still stuck on lunch. We usually end up rotating through the same three simple things, or lunch turns into a huge production that brings our day to screeching halt.

We are lucky enough to be home for lunch (we homeschool) so cooking or reheating isn't a problem.

Any ideas?

what are the 3 things you do use? do you have a bread you like? soup? do you usually serve fruit?

someone will have some good ideas and the above info will help.

Guess I should have added that information, huh? lol

The three things are salad (loaded with vegetables), baked or oven roasted potatoes. We serve every meal with a salad and some type of fruit.

As you can see, we are in a major lunch rut!

How about -

soup in a bowl or a bread bowl
chili w/cornbread or over a baked potato or over rice
pasta
leftovers from dinner the night before
McD approved pancakes (think breakfast for lunch)

on rare occasions:
Boca burger, oven fries
Veggie dog, oven fries

What if you made a wrap out of the veggies instead of a salad? You could steam them and put them on a whole wheat tortilla.

The tortilla's gave me an idea :!: How about bean and rice burritos, or the local Mexican restaurants make McDougall burittos w/ alot of steamed veggies and whole beans, I put salsa on top and Yummy :-D
Rich Richardson's potato/cabbage soup is good, my kids love it. :-D
Another thing I make is mashed potatoes w/vegan gravy, add corn,peas,spinach or any other veggie you wish. :-D

Just a few ideas from another homeschooling family:
I didn't read all the other replies, but our lunches include bean burritos, hummus and pita bread or rolled up in tortillas with spinach and shredded carrots, soup (they like "blended" types; black bean, split pea, potato corn chowder, and campbell's tomato in a pinch). I also make a pasta/broccoli with vegan white sauce that is pretty quick. I add homemade wheat bread and cut up veggies/ fruits or applesauce. We still rely on pb&J and pb&banana rolled up in tortillas. Pb and applepie filling in a tortilla is good too! I am not as strict with the kids as I am with myself....for example the bread I make has oil in it, and I do let them use shredded cheese and sour cream sparingly as condiments on soup or burritos....this is soooo much better than slicing off hunks of the cheddar loaf like the old days though! I would have to say lunch is our most challenging meal of the day....I need to be prepared compared to the old days when I told them to make a sandwich!

Thanks for all of the great ideas! Today we are making a quick vegetable soup. (Veggie broth, frozen vegetables, a can of diced tomatoes, onion and garlic and dried seasonings.)

Using the ideas you guys gave me we made a list for the next few weeks. I think our lunch rut is over!

Krista- How funny! Growing up I didn't know many Kristas... now we are everywhere! We just moved from Detroit to Midland (about 2 hours north of Detroit), but we spent five years in Detroit. I miss the great restaurants. :?

Can you share the pasta/broccoli recipe? That sounds good!
