healthyvegan...thanks for another great option/idea. I will check the 'whole food'grocery here in town for possibilities...no Whole Food in my small mtn. town. Your suggestion gave me great option. Think I'll make some wraps and something from healthy grocery.

Nordgirl, your sandwich looks beautiful! I bought rice paper this afternoon and have put those wraps on the menu for lunch tomorrow. Thanks for posting that!

We enjoyed them so much yesterday at the flea market, while everyone else was lined up at the hamburger stand. I'm sure we had the best lunch of anyone!

nordgirl...I have the rice paper, other ingredients. plus everything to make the v. mayo...dinner/meeting is on Thurs. evening. I plan to make couple of wraps today to practice. Also, am thinking of making one with same base but new toppings of ... sliced fuji apple, avocado, spinach. Do you think this combo will work and will it have enough flavor? Do I make dipping sauce for any of these?

I tried the rice paper wrap for first time last evening using ingredients on hand. Loved the wraps but what I used needed seasoning and were too wet. Will go to grocery today to get ingredients for Nordgirl's wrap. Also, am thinking of a Southwest Wrap. So will try that. Lots of possibilities but I need to practice little bit.

Personally the idea of combing sweet and savory items doesn't float my boat, but it could be amazing. Let us know how it turned out.

Nordgirl, that wrap looks amazing! I don't eat wheat anymore and you just opened up a whole new world of wraps for me! The rice wrappers really can sit overnight made up like that? I would love to be able to take something like that for lunch.

If your hummus is making the wrap too soft, try putting a layer of of greens or something between it and the wrap. A small lettuce leaf could solve your problem. :mrgreen:
