 Post subject: What I am eating on Wednesday

Breakfast: Champorado (Filipino chocolate rice porridge)

Lunch: Leftover 5 bean chili

Dinner: Strawberry-Spinach salad, buttercup squash, wild rice, brussel sprouts

Snacks: banana, a few mini rice cakes

Breakfast - I am indulging today - I wanted a green smoothie rather than a bowl of something. Orange, red grapes, pineapple, vanilla protein powder and lots of spinach.

Lunch - leftover mashed red potatoes, carrots & celery sticks

Dinner - brown rice, black beans, salsa, onion over romaine

It usually calls for sugar and regular milk or sweetened condensed milk, but I "McDougallized" it. It isn't quite as sweet, but I like it. Mary McDougall uses fat-free cocoa in a lot of recipes, but I haven't been able to find it here, so I just look for the cocoa with the lowest fat content. You can make it soupy and eat it like hot cereal for breakfast (this is what a lot of Filipinos do) or make it a little thicker and chill it for chocolate-rice pudding. It is very filling so if you eat it for breakfast you stay full all morning. I put it into 1/2 c. containers (like the little Pyrex custard cups) and also eat it as a snack. Ok, For breakfast:
I had my regular oatmeal with fruit, a few walnuts (I'm not on MWL).

After 30 mile bike ride:
Green smoothie (I don't have smoothies very often but needed to use up some spinach! The smoothie also had some kale, banana, some frozen tropical fruit. Some pineapple juice too.)
Rip's Mighty Muffin

Lunch: Leftover Pineapple Teriyaki Chickpeas over brown rice

Snack: Sugar snap peas

Dinner: Four Spice Quinoa and a side (half of my plate actually) of broccoli.

I did not saute in oil as instructed in recipe, used water instead. I added the water and spices all at once and covered with lid and let simmer on low for 15 mins. I also added some diced zucchini and summer squash to the last few minutes of cooking. I had some roasted sweet potato that I chopped up and added too. This was so good!

I looked at both of these recipes and kind of combined them.
I didn't have the pineapple salsa the happy herbivore recipe called for but the test kitchen tuesday recipe called for pineapple tidbits. I used those and also used teriyaki sauce. The carrots took FOREVER to cook the first time I made it...not sure why...so the 2nd time I made it I omitted those.

This was delicious!

jook with greens

Dish of brown rice with daikon. My brand new rice cooker is being repaired so I purchased a microwave rice cooker... figuring out how to make brown rice. I might be making more jook:)

Dinner: sushi and salad
fruit and raw oats

Breakfast: Oatmeal with a mashed banana and a splash of soymilk

Lunch: sweet potato soup (ate a late breakfast so didn't need much for lunch

Dinner: green salad, lentil loaf, mashed potatoes with mushroom gravy and steamed broccoli

snack: fresh pineapple
