Does anyone have suggestions for something that mimics the flavors of German potato salad? For my German/Austrian family, its a summer holiday special thing, and I'd love to create something with that feel. The bacon is the hard part - I'm thinking mock duck or seitan or something that could be "smoked" to give the bacon flavor, but I don't usually cook with those. I'd love some help! Thanks all.

What about tempeh bacon? http://blog.fatfreevegan.com/2007/08/tl ... iches.html

She also has several wonderful mock mayo recipes without oil, my personal favorite: cashew mayo. http://blog.fatfreevegan.com/2012/04/to ... naise.html

I'm a big fan of Susan's recipes, highly recommend.

I've had tempeh "bacon" in a "TLT" sandwich and it was really tasty. Should work great in a German potato salad.

Maybe this? http://www.theppk.com/2011/10/eggplant-bacon/

Alternatively you could just add some of the "bacony" flavors to the potato salad using liquid smoke or smoked paprika. That won't give you the bacon chew, though. Does the potato salad normally have a chewiness? I would imagine so. I've actually never had German Potato Salad.

it's been years since I had mine but I think I used Not-beef bouillon in it to give a meaty flavor. I don't know how 'authenic' my recipe was for german potato salad. But I loved it.

Darn I need to dig that out and make it this weekend. yum.
