...and water. That is all I use when I press my own corn tortillas. I usually buy a 5 pound bag of Maseca corn flour from the local grocery. My recipe is 2 cups of corn flour, 1 1/4 cup of warm water and a splash of lime juice. I don't add salt, but you can. I end up pressing 16 tortillas. I heat them 1-2 minutes in a skillet and into a tortilla warmer. They are great to eat warm.

Yes, corn tortillas are allowed, even on the MWLP. Dr. McD said he feels people won't be overeating them so he now allows them on that program, even though they're a processed product. Just remember, one or 2 as part of your meal, not a dozen cut and dried into corn chips as a snack.

thank you so much ! I thought I read it somewhere, thought it was the book. I did buy a package already made, but the ingrediants were just that, ground corn, lime juice, and yes, water...
I am sure that portions won't be a problem for me. I cannot express how happy I am following this plan. Hunger is a thing of the past ! I look forward to my meals, before when I was on a prepackaged weightloss plan, the food was fake, and I would stare into the cupboard and think, ok, which package do I open up today... YUCK.... I did lose a great deal of weight on the program and kept it off, but at one point I could not stand to look at that "food" any longer. Now I enjoy my oatmeal in the morning with berries, my big salad at lunch, and veggies and rice at dinner... I make the home made "potato chips" in the micro...
I feel like I am cheating when I eat one... sooo delish with chopped fresh salsa...
ok, enough...
thanks again.

Dr. Kessler in "The End of Overeating" shares the importance of creating your own reward food. When I eat a vegetarian taco, taco chips, or minced apple, cinnamon microwaved.. I am in Heaven:) I have been trying to weigh and measure how I respond with a tortilla microwaved with sugar and cinnamon. And I seem to be doing Ok. It is the closest thing I have gotten to as some type of processed cookie without the reaction of wanting more. I have tired the oatmeal fruit bars, but I end up eating the whole pan. It is also true with the raw date and nut cookies. Now I have eliminated oats, and feel content with the addition of the tortillas. I stay completely a way from wheat.

I have done a lot of dehydrating wraps etc, and I am really pleased I can purchase the corn tortillas at Costco. I would like to make my own, I have a press.. I just don't use my stove.

Aloha, patty

I make mine just about the same way, but will have to try adding the lime! They are delicious when fresh, and I think more filling than the store bought ones, plus they are way cheaper, and you don't have to worry about strange additives/preservatives. They are easier to make than I thought too.

Yeah cheaper is a strong selling point. Initially it will cost a bit to get the corn flour and a press, but 5 pounds of flours make A LOT of corn tortillas instead of spending $3-5 on a package of 8-10 tortillas, most of which have some form of oil in them.

This is how I make mine but I also add a very liberal amount of Mrs. Dash Fiesta Lime. It really spices them up well and adds a great flavor. I made 36 huge tortillas today but I froze some for later use.

Is there another kitchen utensil to use to flatten out larger tortillas? I would like to make larger corn ones, figured I could probably just use a rolling pin to make 8 large instead of 16 medium tortillas.

I use an 8" cast iron tortilla press (the biggest I could find) and I press them so they ooze out. They end up being about 9.5" on average. I can then take a rolling pin and make them slightly bigger but that tends to distort the shape. I find two big ones fit perfectly in the bottom of my 9x13 casserole dish so that is the size I aim for.

Costo.. you can get 100 tortillas for 660. Earlier this evening I cut up a couple of tortillas and placed them in a bag with sugar and cinnamon, shook the bag, then placed them on parchment paper, microwaved 2 to 3 minutes. They were great. Finally I found something that isn't addictive... and satisfying:) They will be a great snack to take on picnics with my children and grandchildren. Can hardly wait for my daughter to come over on Wednesday, so she can try them. I think I will give her my tortilla press. The homemade sound delicious.

Aloha, patty

Thanks ruup. I will give it a try. I ended up turning my 16 tortillas into tortilla chips. Wife loved them with the home made pico de gallo. A bit time consuming, but worth it!

I haven't finished reading the Starch Solution yet, so forgive me if this is in there but I see this above:

Quote:
Just remember, one or 2 as part of your meal, not a dozen cut and dried into corn chips as a snack.

...and I wonder if this is the official word or...? I was actually thinking of making myself baked corn tortilla chips from these very ingredients, and wondered if McD views these as a sometimes-snack-food or something you can eat as a starch or veggie?

I would define chips as a snack, whole tortillas as a meal. The world according to me :)

What??? I live in south Tx and a package of 30 runs about $1.39. They are a staple here. I've never seen corn tortillas here with oil either, the thicker flour ones have oil or lard but not the corn.

I am on a taquito kick for breakfast right now, fat free hash browns in a corn tortilla with green salsa, yum!
