 Post subject: Any Vegan Lefsa Recipes?

I'm Norwegian and lefsa was something we usually ate at holidays. I hadn't thought about it until my parents came to visit and we went to EPCOT. They sell lefsa with butter and sugar there. I was thinking there has to be an easy vegan version since its just a potato flat bread. When looking online I can find vegan versions, but they require large amounts of butter or oil. Anyone know how to make it without?

Thank You!!! I googled Vegan Lefsa and found all kinds of recipes. Guess I should have tried Low Fat Vegan for my search. I was wondering if applesauce would work as the oil replacement. According to the first link it will. :D

My mother was from Minnesota, and we ate lefsa when we went back to visit my grandparents. (Yep, with butter and sugar - maybe cinnamon too. Does that sound right?) Not something we see here in CA, so one of these days I'll have to try the recipe that AA linked.

Yep, that sounds right. Although my family used to wrap margarine and turkey instead of the butter and sugar. My college roomate who was also Norwegian told me about the butter and sugar option. When I was little I used to like it plain, which is what I will be trying when I make the no oil version.
