Or what do you make with them?

I've always loved fresh pico de gallo on a baked tater, but I'm sure I'll tire of that sooner than later.

Today I made a very quick potato salad - I had boiled potatoes in the fridge, so I diced carrot, onion, celery, added it to the cubed potatoes. I made a dressing with a little bit of dijon mustard, white balsamic vinegar, and an herb de Provence mix. Kind of yummy - I was just in the mood for potato salad, and with the dijon mustard in there, I didn't at all miss any sort of creamy dressing. I've made it with veganaise before, but this worked too, with no fat added. Hope that helps!

I usually add a cheese sauce on top of it with some salsa. If I slice them into discs I will opt for the horseradish/mustard dipping sauce. But my wife loves the potato enchilada style. Can't say I blame her, they are very tasty.

Yes, Dijon is great for that, I go through huge quantities of it around here. I'm making scalloped potatoes tonight with a very creamy dressing, consisting of sun dried tomatoes softened in boiling water, which are blended with soya milk and corn starch. I'm going to top it with a fried panko bread crumb/garlic topping. I'm also going to layer the potatoes with thinly sliced zuccini.

Although I've learned to eat my baked potatoes plain with just a pinch of salt and pepper when I go out to eat, at home I also like them with the following things on top:

Bean chili

Chopped broccoli and "cheese"
(I use the melty cheese recipe from Dr. McDougall using nutritional yeast--it's yummy!)

On occasion I also make "sour cream" made with lite tofu.

I also have made corn butter, millet butter and carrot butter made from recipes in Dr. McDougall's books.

My favorite topping is refried beans and fresh salsa. Its so satisfying and tastes so good and you can use either pinto or black beans for a change. I also like browning potato wedges in a non stick skillet and dipping them in salt free ketchup or the no oil bbq sauce. For a quick dinner I top a baked potato with baked beans or chili.

As it's already getting pretty warm here in the south, I think I'll start eating more cold potato dishes before long. I see lots of potato salad dishes in my future! :)

Hummus.

Chipotle sauce.

Salsa.

Guacamole.

And sometimes just plain naked, especially sweet potatoes or new potatoes or Yukon gold potatoes.

I have fallen for steamed or nuked potatoes with Stubbs Barbecue Sauce..the Honey Pecan...the store I bought it at {I have only bought 2 bottles} has run out...maybe this is telling me I shouldn't indulge...this stuff is addictive! of course their is always mustard...

I like to mash the potatoes and mix in sweet corn, BBQ sauce, salt and pepper. It's strange, but good.
