Thunder stormy weather here.
doing good today, NO car still, but part is in, the new Power steering module, electronics from china, and it will never happen again, I am assured! a fluke, Hey the Angels were with me I am sure of it. That was the only possible intersection in town that I could have had a good straight drive to get in someone's driveway, and stop, with no steering at all, couldn't have even gotten off the road, just have stopped dead, and ran off myself, and left car sitting there, the what ifs will drive me nutty, so why bother?? I was saved that is all.
Yesterday was the one yr ann. of my mother's death too. smile when I think of it all.....
good day here, and working on the table runners --- making more of my homemade soup stock, and had my usual steel cut oats, and apples cuts and cinn, lunch was my soup and brown rice.... nice day here!
Going to try a new fat free vegan recipe for balsamic-raisin vinaigrette that sounded good, I get the newsletter wkly as a email... some good recipes in it.
all ok, and happy to be here!

I'm glad your alright. BIG HUGE HUGS!!! Glad you look back with smiles. I just got some new vinagars for my house one is a date vinegar and the other is a chocolate vinegar. mmmmm to both.

nice day today. We decided to take a drive to the military commissary, and that was our outing. Such polite and well behaved children, and teens, and that is a big contrast to what we usually see at our local Walmart for sure.
I did another hr on the wii this am, and really wanted to see the piggy bank change again, since I am up to 30 hrs now. but no change at all! and here I thought since it changed at 10 hrs and then 20 yrs it would at 30 yrs too. If anyone knows, please tell me what is going on!

Hi Carollynne....Thanks for stopping by the inspirational quote of the day thread. You are getting stronger and stronger everyday. You Rock!! Where can I find the recipe for the balsamic-raisin vinaigrette? It sounds so good.

At the beginning we were learning and doing the trial and error thing with food and now it's just second nature. "We" just automatically make the right food choices cause it feels right. I still have my moments but I read a book called Keeping it off, Winning at weight loss, and I really learned something about how I am in regards to getting healthy and losing the weight. Food has always been either punishment or reward and not as it should be, to nourish my body. I no longer parent myself or lash out in a childlike manner, i.e. binging on sugar. I see it as an adult would, by owning it and taking responsibility for my own actions and choices.. The brat still wants to come out from time to time, but I love her into submission. :)

We are having strange weather here too. Stormy one day sunny and warm the next. Can't wait for summer and cute summer clothes.

Hi Christine, Yes you hit the nail on the head for real! It has been about 3 yrs now, with my 2 sons, and the last yr has been all so easy... not that I do not long for some sweetie, and then pay for them when I do indulge. (digestive mishaps...) But it not a chore to stick to this WOE, it is just what I do now. Others do not bother me, and I have never felt so good, in my life, as I recall, since maybe my 20's!! Cool beans
Son is making us 3 kinds of tacos, and I just had a huge salad, and a green smoothie too. I gave them up for a while, then watched the latest lecture on VSH.org and of course had to try them again. I really love to juice when I have the time and a ton of produce from garden, and I love my home made carrot juice!

Christine, that recipe was on the fatfree vegan site, I get their wkly emails for recipes and they are usually so good. I copy them all off and try them sooner or later! This one is Spicy-Walnut salad with fat-free balsamic-raisin dressing.
here is a copy and paste of it for you to see! 8) 8) 8)
Fat-Free Balsamic-Raisin Vinaigrette

You can make this dressing sweeter by using apple or white grape juice instead of water. Or add a little spiciness by mixing in a tablespoon of spicy mustard.( Or add creaminess by blending in a teaspoon of tahini or a tablespoon of raw cashews.) I skipped this....

Ingredients

1/2 cup white balsamic vinegar
1/2 cup water
1/4 cup golden raisins (see note below)
1 large clove garlic
1 teaspoon basil
1 teaspoon oregano
2 tablespoons Meyer lemon juice or 1 tablespoon regular lemon juice
2 teaspoons Chia seeds
1 teaspoon mellow white miso or salt to taste

Instructions

Combine all ingredients in a blender and process on high speed until liquified. Pour into a storage container and refrigerate until thickened slightly. Stir or shake well before using.


I was cleaning up the kitchen, doing my kitchen yoga stuff, and now here I am sitting on my duff, in virtual land, and I should be exercising, but had to check the journals instead.
So bummed out, my fav pc of Pampered chef stone ware got cracked, and I have used it since 2002. Son wonders if perhaps he used too much watery sauces (his jerk sauce) and that did it. Well who knows? Any body know if that could have done it? But that is that, and I have other for sure. I bought a lot of P chef stones when I was working and everyone had the buying parties.
I am up early and feel great, it must be so true, when you eat all the clean plants and no dead animal parts, your tummy is just so wonderfully efficient that you can rest better. Plus I did a lot of exercising too yesterday. The gym for the machine, I love that true strider one, and did 13 min, on it, then the machines and the pool for 30 minutes. Plus walked the dog at the park, in the fenced in area for dogs and all around it too. Getting so much stronger doing this. she just loves that so much. Incentive right there, since she needs the exercising as much as I do.
got my oats soaking and plan on getting to gym earlier today, since I have 2 appts in town 12 and 2. Still need to exercise!

Our paper carried an article about the pink slime on ground beef. and It is about time, is all I can say!
Easter holiday is almost here, and weather is no nice. Wedding table runners made, for the material I have so far, and they came out so nice. No need for the interfacing I thought I needed.
All is well, and beginning to stay calm. nice feeling.
Cannot wait to read the starch solution.
making up a lot of greens daily and also a green smoothie in am. again. Love them...

Hi Rosie! Hope your day goes well where ever you are, and thanks for stopping by my journal!
Here is what my sons wants to make for our Easter dinner, (and DH is going to have this plus some broccoli/cauliflower veggies, plus some dead animal I know!!
Spicy Creamed Spinach and Potatoes
1 lb. fresh spinach leaves, washed well (or frozen if you must)
2 cups 1/3″-diced potato (about 6 new potatoes)
4 fat cloves garlic
1/2 medium yellow onion
1/2 tsp. turmeric
1/2 tsp. salt, plus more as needed
1 tsp. garam masala
3 Tbsps. plain soy milk, plus more as needed
crushed red pepper to taste

Serves 2 as main dish, 4-6 as a side
Time 20-30 minutes

Wash the spinach leaves well and drain. Toss them in a pot along with a 1/2 cup of water. Heat on high for a few minutes, stirring, until the water starts to steam and the bottom leaves begin to wilt. Give it a good stir, cover, lower heat, and cook for about 7 minutes, until just tender. Drain (don’t worry about getting out all the water.) Puree until smooth in a blender or food processor.

Meanwhile, toss the diced potatoes in a pot with water to cover, and bring to a boil. Add a ½ tsp. of salt. Cook the potatoes for about 10-15 minutes, until tender. Drain.

Cut off the root ends of the garlic cloves and lay cloves flat. Lightly pound with the side of your knife blade and peel off the papery skin. Finely mince up the garlic. Peel and finely mince the onion as well.

Heat up a couple tablespoons of water in a good-sized, non-stick sauté pan. Cook the garlic and onion over medium heat until soft and yummy-smelling, adding more water if necessary. Stir in the turmeric and cook a minute or two more.

We had this at the Indian Restaurant and just had to try it at home soon.
Plus he made up a sweet potato pic is little ramekin dishes, and they came out great! no crust, since who needs it anyway!
It is a nice cool kind of day, and I love it!!

fulenn, HI, and yes son and I have both tried that at a Thai Classic restaurant in G burg. It was too sweet for me, the way they made it. to much of the coconut I guess son loved it tho and has ordered it more than once there. I love plain mango, all by itself!!

Fulenn, no I have not tried out that on line recipe yet! will someday.
We had a nice Easter of curried veggies that started out as a creamed spinach Indian recipe, but we added more broc and cauli. so it got better. and little baby reds.
went for a nice long walk at State park, and knee was hurting a bit. So this am, I did get to pool at gym and did the pool exercises and that is better.
Had more of Sons' oven roasted red pepper tomato soup. Delish...
hope all is well, too sleepy today!
