 Post subject: Cold Summer Foods?

Hi all!

It's starting to hit ridiculous temperatures out here, and I'm not looking forward to eating warm foods for breakfast, lunch, and dinner. Unfortunately, my previous salads + seafood routine may not be the best idea--nor the all-raw routine afterward. Are there any foods that may taste better cold, or are in general light, summer foods?

Desserts and snacks are also welcome! Thank you.

I posed this very question last week on the Foods and Recipes part of the forum -- it is that time of the year. This week, I made the lentil salad out of the Esseltyne book -- it was delicious! There are some other recipes on that thread as well!

You can make plenty of lentil, pasta, corn, rice, potato salads. There are many Korean vegetables that are eaten cold as salads such as bean sprouts, spinach, cucumber, cabbage, etc. You can make Mexican salads with salsa and black beans, quinoa salads or a wrap using a collard leaf or romaine leaf as the bread with a chickpea "tuna" filling, etc. I like to use a food processor and chop vegetables up small and make a vinaigrette dressing with beans, corn, rice or quinoa on top, cold.

WATERMELON!!!!!! and really any fruit that is available. I love salads (baby greens, lots of varied chopped veg) w/ tangerine slices and a sprinkle of sunflower or other seeds.

Check the McDougall newsletter recipes. There are many wonderful and easy summer recipes to be had there.

These are wonderful ideas, thank you! And I will look through the McDougall newsletters, as well.

I did see your thread in my search, Sharon, but didn't look at the dates. Now why didn't I think of lentils? It sounds delicious!

The fruit is still in the Spring season here, unfortunately, but I can't wait for the melons and mangoes. :)
