Hi ya'll

I'm looking to make a creamy chickpea soup and add some kale or collard greens to it. I searched on the internet and I'm unable to find one, so I might just have to experiment. I'm thinking I would just add chickpeas with vegetable broth and use my immersion blender and then add some spices like garlic and chipotle powder but I'm not sure what else and then I would cook the kale in it the last couple of minutes.....

Does anyone have a recipe by chance? Thx :nod:

Don't have a recipe, but, I've often made "creamy" soups and the magic is usually achieved through blending beans (so the chickpeas are good) and POTATOES (so you may want to consider adding a few and it will be tasty, too :nod: ).

I would blend in some silken tofu, it will definitely give you that creamy taste and look.

As well as added fat. Tofu is high in fat and is a processed food--as such, it is considered a condiment on this plan--not to be added to every recipe!

I just left out the oil and it was fine. Delicious actually. :) Also, I used low-sodium broth and left out the salt.

I used chickpeas and potatoes and blended it together with leftover chickpea juice and then I added spice to taste. It came out really thick and creamy--surprised me actually. Thanks :D

We make a soup that calls for diced tomatoes and a can of chickpeas. Blend half of the tomatoes and all of the chickpeas in a blender until smooth, then pour into a pan and add 4 cups of vegetable broth. At the end you can season with either fresh rosemary or fresh basil, and salt and pepper. It is creamy and the whole family loves it.
