Congrats on the super low blood sugar #! All the recipes sound great. I actually have one of the Happy Herbivore cookbooks - I should check it out.

Have a great weekend!

Hey Toadfood,

You are doing really awesome. I can't find it now but I once read Jeff comment on fast weigh loss saying that it's safer than being overweight/obese--does that make sense? There are just no studies out there on losing weight on a low fat vegan diet, yet

Hi Toadfood,

I am so impressed by your progress. You are seeing the results because you are following the tenets of this program. The principles are simply applied. The hard part is adhereing to it. You have nailed the hard part! Now you are getting the rewards!

I say don't over think it. Just keep doing what works.

Your results serve as an inspiration for everyone trying to get in the groove like you have.

Thanks for the support, ladies! Amy, I made three recipes from the Happy Herbivore book over the weekend and I liked all of them. I also made the new Southwest stuffed baked potatoes recipe from the FOK web site, and it is delish.

I made a huge pot of colcannon over the weekend. I was going to make more baked taters, but a bunch of my taters were green (grrr) so I decided to peel them and mash them instead. After looking at several recipes, here's what I did:

Boil a big pot of potatoes -- I'd say it was at least 5 lbs.
Chop some onions and cook them in soy milk, with nutmeg
Chop up a big head of cabbage, cook it separately in a little water.
Mix the onions and milk into the potatoes and mash.
Stir in the (well drained) cabbage. Add salt and pepper.

My weight is continuing to drop -- my ticker is a little out of date right now. All sorts of bones are emerging. My girlfriend said when she hugs me she is afraid I will break. I said, I'm just as sturdy as ever, the armature is the same, there's just less fat on top of it.

This made a huge tub, which I will be eating from all week.

Wow, Toadfood, great going! You will have to post a photo or wear a name-tag. Not sure I'll recognize you when we go to H-Mart.

I know, it's crazy, right? The thought that I could reach my high school weight (150) no longer seems unrealistic.

Thanks to everyone for the support and encouragement. We can do this!

Yesterday I took the day off work and went to D.C. to see the cherry blossoms. They are peaking right now and are so beautiful! I walked for about 3 hours. I brought lunch and a snack, and ended up buying a Clif bar to supplement what I'd brought. I cut back a little on dinner to compensate for the Clif bar. It worked out well. I walked about 5 miles total. I felt a little sore last night, mostly because I was carrying a backpack all day, but today I feel good.

Hi Toad,
Your walk around DC sounds lovely. I've never been there, except when I was too young to remember. We have cherry trees in bloom here in Washington state and they're a beautiful pink.

You're doing so well. Yay!

Hi! I bet you can remember a time when that 5 miles wouldn't have happened and if it did you'd have been in serious pain. I'm impressed with you. You go!

Thanks, ladies! Actually, Anna, it's funny -- even at my fattest, I was able to hike a good distance, if given enough time. The differences I've noticed have been in flexibility (I sit in a lot more different positions now) and speed.

I added a new ticker, for swimming. I'm still working on establishing a pool routine, and am hoping this will help motivate me. I figured out that there are 36 laps in a mile (actually, 35 1/4 laps, but who's counting?) so my goal is to swim 100 miles! I've been swimming 15 laps every time I go to the pool, so I'm getting there.

Hey Nomikins! I thought of you when I updated my ticker. Looks like you'll be joining me here in the 170s very soon!
