This salad has been on my lunch and dinner menu for the better part of a month now. It's a
tri-colored couscous salad.

It's quick and easy and you can add a wide variety of veggies to it. Currently I use cucumber, spinach, tomatoes, cilantro, sweet peppers, jalapeno pepper and celery. The "dressing" is a combination of apple cider vinegar, liquid aminos (or Tamari) and Sriracha Hot Sauce. I have also substituted the larger Israeli couscous with much success.
