 Post subject: Buttercup Squash

My favorite starch by far is a buttercup squash. Unfortunately I am living in Central Illinois and just cannot find them anywhere. If anyone knows where I can find them in bulk I would be happy to drive fairly far.

Buttercup squash are yummy, aren't they? Unlike butternut, I think they tend to be seasonal. You're more apt to find them in the fall, September to December. http://www.specialtyproduce.com/ I know that here, the buttercup pretty much disappeared after Thanksgiving. So sad. :crybaby:

Maybe this next Fall you can freeze some to stretch out the season.

My avatar picture was taken last winter at my local county garden and it was so beautiful to see all the starches!
I found the bright orange one this last winter very good. I am not sure if it was a golden nugget or what.

I need to get on a local farmers market monthly program! I will look into that soon.

I found buttercup squash at my local Hy-Vee and they are willing to order me a case a week at .99 cents a pound. If you have never had buttercup squash I highly recommend it. Two times better than butternut. Its dense like a sweet potato but sweeter.
