1 can garbanzo bean (drain and reserve the liquid)
1/4 - 1/2 cup roasted red-peppers (make sure to buy the kind packed in water not oil). Basically, I just fish out a big piece with a fork
1 tsp chopped garlic
1 tsp cumin
Juice of one lemon
Combine ingredients in blender. Blend until smooth, adding reserved bean liquid as necessary to keep blender from bogging down.
I usually serve this with a sprinkle of Hungarian paprika on top. So simple and so good. No tahini or oil needed.
