My husband saw this tip on our national morning news show, Canada AM. Store your ginger root in the freezer, and just grate off what you need as you need it. No need to peel it first. it works like a charm, and you get none of that stringy stuff happening

I had a hard time picking a piece at the market the other day because they were all much bigger than I wanted. Now I don't have to worry about that. Thanks for the tip.

Donna, you can just break off a piece the size that you want. You don't have to buy the whole thing.

Dear Melinda, I needed that tip. Just last night I was bemoaning the piece of ginger that I would be wasting because I bought more than I needed for the recipe I was making. Now I'll pop it into the freezer and use it next time.

Thanks so much for your very helpful hint. :-D And not being a fresh ginger user previously I didn't know you used the peel too! I was really thinking ginger just wasn't worth the trouble.

This is why I love this board!

I have been doing this for so long, I love it. I use a microplane to grate it, and it works wonders.

I recently started pureeing the ginger with garlic. Then, I freeze them in ice cube trays. It makes life easier, if a recipe calls for both I just pull out my little ginger-carlic ice cube and throw it into the pot. :)

No, I have an icecube tray for purees and such. For example, I like to freeze tomato paste in 1 tbsp cubes. That way I have no tomato paste going moldy in my fridge.
