My Hubby is from the Philippines, and their national dish is Adobo, usually made with pork, chicken, or beef, or a combination of the meats.
He has been longing for the dish for awhile now, but I didn't want to cook it with pork or chicken, even though he still eats chicken on occasion...So I adapted my Mother in laws recipe....All veggies..and it came out awesome..Hubby loved it.
It involves soy sauce and vinegar, so if you are watching sodium...you might want to adjust the amount of soy sauce, but it is part of what gives the dish its flavor..so I wouldn't adjust too much.you can use what veggies you want, but don't use any veggies that cook quickly..it will be mushy

1 onion chopped
3 cloves of garlic minced
2... 16 oz bags of frozen California mix(Broccoli, cauliflower and carrots)
a handful of frozen green beans.(I use whole green beans)
4 large potatoes chunked..skin on or off your choice
1/2 cup rice wine, Palm(found in Asian stores)or distilled white vinegar..Other vinegar's will not do for the authentic taste
1/4 cup soy sauce
cracked black pepper to taste
1 bay leaf
put everything in a pot and bring to a boil..cover reduce the heat until the veggies are cooked...if you want to reduce the sauce turn it up to high uncovered and let the liquid evaporate to the desired consistency...remove the bay leaf before serving

Edit..If you like your California mix veggies crisp...don't add them until the potatoes are almost cooked..Hubby likes them soft, so I just throw everything in the pot at the beginning.

Serve over rice

Do I serve this with rice? What else would I put on the plate with it to round off the meal?

I used to adore Filipino food before switching to this way of eating. I too would love more recipes, especially if they are Maximum Weight loss friendly. thanks for posting this.

This sounds easy and delicious. I'm surprised the potatoes cook well in such a small quantity of liquid. Do you put them on the bottom of the pot, then liquid, then veggies?

The potatoes steam very well, as long as the mixture is brought to a boil first..then covered.

I don't keep a journal, but I do post my daily menu in"Roberta's Corner"

This is served over rice...its filling..you don't need anything else to make a meal

I don't have anymore Filipino recipes that can really be made "McDougall Style".....if I come across any I will post them....

I am Filipino and I grew up loving adobo. But since I'm watching my diet now, I can't have my favorite food always. I'm glad I found this recipe. It is amazing because it doesn't use any meat like pork or chicken. I can now enjoy adobo without gaining extra fat.

Yes, I would think so..but not balsamic or apple cider...that would change the flavor too much

Thanks for posting this. I have never had the real thing so I don't know how authentic this tastes but for my family it tasted fantastic! We all enjoyed it and it was quick and easy. Great recipe!

Wonderful! Thank you for the suggestions. I will run some of these dishes by the wife and see if she wants to try any of them. It was 2 more batches of potato enchiladas last night. I ate 4 of them!
