regarding the vitamins for a vegan recommendation is only B12... and D if testing shows you need it.
you get the rest of your vitamins and then some just by eating a diet rich in whole fruits, vegetables and whole grains.
If you are worried you can check your food on a weekly basis with het cronometer or any other dietary counter.
