 Post subject: SNAP and beans

I've been using your suggestions regarding your SNAP recipes. I've noticed that some of my mixed frozen veggies contain beans...lima and red kidney beans. Do you try to avoid all beans? Should I stay with the simple mixes? Thanks.
Edit: sorry, reread the entire SNAP thread and you do mention the mixes having lima beans. :oops:

Gypsy,

I've only cooked one snap meal so far. But I think the recipes are meant to be guides. So if you have found a yummy mix that you like that includes beans - then I think to keep a nutrition balance you would want to use less of the canned beans and add in more veggies.

Hmm - I don't remember seeing any veggie mixes with beans - will have to explore further.

Re: Veggie mixes with beans -- I tried one this week that was called Sante Fe Mix -- corn, black beans, diced peppers and onions. I microwaved and maybe overcooked it? But I definitely like my fresh chopped onions and peppers better, and the beans were not as good frozen as they are out of a can, IMHO.

I thought the "standard" mixed vegetables was a mix of green beans, peas, carrots, corn, and lima beans.

In the frozen vegetable world there are many new mixes with beans.
there is the santa fe mix of corn black beans onions and peppers and one brand i have found has added broccoli to the mix.

then there is one with kidney beans in it. there are more and more frozen veggie mixes out there. which is nice when I get up late and have to throw together a lunch bowl to zap at work in a pinch

I like to throw a buch of one of these mixes in a large bowl and top with orida O'brian potates and if i have some green enchilada sauce throw a bit of that in.. lunch in a bowl in two minutes and then microwave for 5 to 7 minutes at lunch.

or sometimes i mix a bag of greans with the standard mixed vegetable bag.

I am confused, who asked anyone to avoid beans? (Other than the "general" rule to limit beans to one cup per day)

Yeah I like to have a bit of beans in my meals as i stay full longer.

Plus they are yummy

Jeff's recipes often contain beans. ??? Not sure why anyone thought otherwise! Beans are wonderful! Dr. McDougall suggests limiting them to a cup a day total b/c they are so high in protein, but certainly don't eliminate them!
