Spaghetti with Bean Balls

Ingredients (for 4 servings):
2 15-0z cans pinto beans, drained and rinsed
1 carrot, minced (or processed)
A big handful of fresh parsley, minced (or processed)
1 clove garlic, minced (or processed)
1/2 cup whole wheat breadcrumbs
1-2 Tbsp your favorite Italian seasoning (basil, oregano, garlic, salt, etc)
salt and pepper
3 cups of marinara sauce

Preheat oven to 375 degrees Fahrenheit. In a large bowl, combine carrot, parsley, garlic, Italian seasoning, bread crumbs, and beans. Mash with a potato masher (or use a food processor) until the mixture is sticky and relatively homogeneous. Season with salt and pepper to taste.

Form the bean mixture into 1-inch balls and align on a cookie sheet. Bake for about 20 minutes, turning once midway through, until the bean balls are nicely browned all over. While the bean balls bake, heat up the marinara sauce in a saucepan, and add the bean balls to the marinara when they're done. Let sit for 5-10 minutes to combine the flavors. Serve over pasta or on sub rolls.

Bean balls? Why not. I have a batch in the oven as I type. I hope they turn out nicely, but I don't know why not. They smell nice and the taste I took had a good flavor.

Hi Heidi. They taste good! I did not make spagetti and serve them that way, I actually made them for the freezer so we would have a quick and easy meal when we are totally lazy. But I had a marinara sauce to go with tonights dinner, spinach-onion polenta pie, and dipped one of the bean balls into it. Yummy! The inside is creamy like you would expect hot refried beans to be and the outside was hard. I couldn't get a brown on them, though. They stayed the same color. i cooked them at 375 for the recommended amount of time and then tried letting them go a bit longer, but no luck. They were still good though. I did add some worcestershire sauce and mustard along with basil, garlic, onion powder, salt and pepper.

Finally thawed the beans from the Spagetti and Bean Balls and made it. Yum! The bread crumbs and spices give the balls a nice flavor. I do think that next time I will use 1 cup of bread crumbs instead of 1/2. The balls do lose their shape as soon as they get hot, just like you would expect beans to do. My hope is that more breadcrumbs will take care of that.

If you add some egg replacer or some ground flax seed the bean balls will tend to hold their shape better.
