Veggies for breakfast rock!

FBS today is 118! Woot! My weight is down too, but I won't report an "official" weight until Monday.

I had a little run-in with some peanut butter yesterday. But the jar is gone now and I won't be replacing it. I didn't get any exercise either. Otherwise a good day.

I have the day off for Veterans' Day today. I'll be spending it grocery shopping, cooking, and packing for our upcoming move. We are moving to a new apartment on December 20. It's only 3 blocks from my office. Eliminating the commute should make eating on plan a lot easier.

And three blocks makes for a nice walk to and from work (hopefully!).

A friend moved to NYC. He sold his car and lost 40 pounds just from walking places.

I would love to live in NYC for just that reason - get rid of the car and walk everywhere! Forced exercise never hurt anyone!!! And it would help me :)

What kind of veggies do you eat for breakfast? Do you make them that morning or the night before?

It is going to be a nice little walk. I commute by public transportation now, so I'm already walking.

About six years ago, I moved within walking distance of the job I had then. I walked to and from work every day and lost 20 pounds without making any changes in my diet.

I eat frozen veggies for breakfast because it's easy -- so a bag of green beans, spinach, whatever. I just nuke it that morning and eat it with some grains.

Today:
Breakfast: multigrain bread, apple, almond milk
Snack: 1 ginger chew
Lunch: peas, apple
Dinner: black bean and butternut squash chili (adapted from a Robin Robertson recipe), brown rice

FBS: 148. What's up with that? Maybe quinoa is a better grain for me than rice, these days. Today is going to be a rice-heavy day because that's what I've prepared, so I guess I'll see how that goes. I know plain rice makes my BS go up, but I thought with beans and veggies it would be okay.

Yesterday I was going through some old papers in preparation for my move and found my test results from when I was first diagnosed with diabetes 6 years ago. I was a fishatarian then and ate a lot of dairy. My FBS was 220, A1C was 10.1, cholesterol was close to 300, triglycerides over 1,000. So I have come a long way. I realize that vegan does not equal healthy, but I must say that just cutting out the fish, dairy and eggs improved my health a lot.

Today:

breakfast: broccoli, cauliflower, and carrots with brown rice and gomasio
Lunch: black bean-butternut chili with brown rice
Snacks: apples
Dinner: probably more chili and rice, haven't decided yet

The black bean butternut chili is adapted from here:

I left out the oil, of course, and made a couple of other substitutions to accommodate what ingredients I had in the house, but the basic recipe is the same. I just dumped everything in the pot all at once and cooked it until the squash was done, and that worked fine.

Substitutions I made:
--Green pepper instead of orange
--Diced canned tomatoes in juice instead of crushed
--Water instead of apple juice. I added about a tablespoon of molasses,and figured that substituted both for the sugar and for the sweetness of the apple juice.
I also left out the salt and pepper. It doesn't need them.

Thanks for the recipe, Toadfood. I had most of the ingredients, but need the squash & a few more cans of black beans. If I can find a small can of apple juice I will, otherwise I will try it your way with the water. Although I have used apple juice instead of water in my oatmeal, so I guess I could use the extra that way.

FBS: 133. Grr. I attribute this to too many Ginger Chews last night. I won't be buying those again.
Weight: 251.6. Yay! That's a loss of 7.4 lbs in one week! I know that's crazy and I won't (and shouldn't) have that rate of loss in the future, but it sure is nice to have that boost at the beginning of the journey.

Today's plan:
Breakfast: steel cut oats with pineapple and mango
Lunch: black bean butternut chili with brown rice
Snacks: apples
Dinner: brown rice and a green vegetable

I did a lot of cooking over the weekend and took a nice long walk yesterday. Go me!

Hi everyone, thanks for the support and I hope you enjoy the chili. It was really mild (I thought) when I first made it, but it seems to be getting spicier as it sits in the fridge.

I have an awful cough/cold/sore throat thing going on. Last night I skipped dinner because my throat hurt so much I just didn't feel like eating. It's really rare for me not to want to eat, for any reason! Today I still sound terrible but my throat is a lot better. I drank some Throat Coat tea and ate breakfast slowly this morning.

Today's plan:
Breakfast (already eaten): steel cut oats with pineapple and mango
Lunch: mung beans and barley with veggies. I made this Indian flavored concoction, which I am calling "Purina Human Chow," by adapting a recipe I found on a fasting web site. Apparently some yoga practitioners recommend doing a Mary's Mini type "cleanse" where you eat rice, mung beans, and veggies at every meal for a month. This version is mung beans, barley, carrots, celery, onion, turnip greens, and various Indian spices I had in my cupboard. I don't think I got the flavors quite to my liking, but I'll keep working on it.
Snack: apple
Dinner (assuming I feel like eating): I'll try for brown rice and a green vegetable again. I don't eat enough vegetables.

Yesterday I had a big plate of green beans and brown rice for dinner, so I'm happy about getting my vegetables in. And I think starting tomorrow I will be planning to eat my vegetables for breakfast again. I actually really like most vegetables, so I don't know why it is so hard for me to get them in. Well, yes I do -- it's the pleasure trap. Having lots of frozen choices really helps, as I am lazy and I work full time. Right now I've got broccoli, spinach, green beans, cauliflower, and a broccoli/cauliflower/carrots mix in the freezer.

Today's food:
Breakfast: steel cut oats with mango and pineapple. The last of the batch.
Lunch: black bean/butternut squash chili, brown rice
Snacks: apples
Dinner: quinoa and a green vegetable.
