I think I read in an IPCC report that 11% of anthropogenic sources of GHG are from agriculture, and I estimated 6% was due exclusively to livestock. So if the world magically became vegan / pescetarian / insectivore, anthropogenic GHG emissions would drop by 6%.

I doubt that applies in North America though. We have found all sorts of methods to release GHG, but we only consume twice as much animal products as the average human.
