Savoury Oats with Peas & Carrots

Savoury Oats with Peas & Carrots

Ingredients
150g of Oats (I use steamed rolled)
560g of Water
1 large Carrot finely grated (100g)
150g of frozen Peas
Salt & Pepper to taste

I usually weigh my ingredients, but you could just follow the instructions on your oats package. I think roughly it's 1 cup of oats and 2 1/2 cups of water.

Put the oats and water into a pot and turn on the stove.
Then finely shred the carrot with a grater and add that in too.
Once it starts simmering, lower the heat
Add in the frozen peas.
Stir frequently throughout
When it reduces down to your preferred consistency, take it off from the heat and leave it covered for several minutes.
Serve and enjoy.

This is a good alternative to rice.

Servings: Recipe makes 2 good sized bowls.

Just the type of recipe I like - simple, highly McDougall friendly and no doubt tasty.
I would however have only one serve which in my case would be the lot.

Looks good, now add some more veggies, maybe a potato and onion as well and some curry powder.

This is a great recipe. I do something similar and add some spinach to it. I also add turmeric and Asoefida (Hing). And at times curry leaves to add more flavor.
This is easy and gets ready in 15 minutes or so. It is so easy that I make it for breakfast some times.

Glad I found this post again. It reminds me of a sign I saw in a window in Minneapolis: "Beer isn't just a breakfast drink anymore." Many people put vegetables in omelettes, but I've never seen it in oatmeal. Omelettes are out since we don't eat eggs. I think this is something I will start doing every morning with my oatmeal.
