Beets were in my produce bin this week, but I'm not quite sure what to do with them. Any suggestions? Also, can you eat the greens attached?

Yes you can eat the leaves - steam or sauté just like any other green.
As for ways to eat the roots: grated raw into salad, boiled whole or baked in slices, as dip, beetroot curry, added to stews, mixed with grains to make burgers, so many choices!!!

My favorite way to prepare beets is to roast them. Just cut the stems off about 1/2 - 1" above the top of the beets. Wash thoroughly to remove any sand and mud. Roast whole (tail attached) in a 350-400 degree oven until tender when pierced with a fork. Let cool and then the skins will just slip right off. These are really good with horseradish sauce.

When I do the leaves and stem, I generally strip the leaves off the stem because they cook much faster. I bundle the stems together and chop (like celery) and cook them in lightly salted water until tender. I generally blanch the leaves in boiling water for a couple minutes, drain, squeeze the liquid out, and then chop and toss with some garlic. Once blanched like this, the leaves freeze well and can later be added to soups.

Love beets...yes eat the greens and cook like any other. I pressure cook beets (high, 7 mins) and either eat warm with rice vinegar or chop and store in fridge for quick snack.

No need to grate the raw beets - just cut them up in chunks.

The small tender leaves can be eaten in your salad just like lettuce.

I make a salad of beets, carrot, and orange. Cook your beets and carrots, grate (about 2:1 beets:carrots), then add either sliced orange sections or remove the pulp from the membrane entirely.

Mix, chill, eat.

I think I will do the baking style today. I haven't had beets as an adult as I had convinced myself I didn't like them. :-)
