 Post subject: Any GL free vegan bread recipes...

I just ordered a mini zojirushi bread machine. It bakes a 1 lb. loaf. I have never baked bread before. I would love to make my rice own flour. Any ideas/recipes would be appreciated. I think I read flax works vs. eggs... apple sauce vs. oil.. not sure about amounts and soy?

Patty,

I use recipes from the "Complete Gluten-Free Cookbook"by Donna Washburn and published by Robert Rose books (2007). It has many bread, muffin and other recipes with egg-free versions. Most do call for oil, but I have substituted pureed prunes or applesauce. I do not know if they will work in a bread machine or not since I don't own one (yet).

While the whole wheat flour I use has gluten, the rest of the recipe (whole wheat oat honey bread seems to work well.

Haven't tried this in a bread machine but the bread, with my McDougall modifications, is excellent! This link (from Bryanna Clark Grogan) has a vegan & gluten free flour mix which works in the bread recipe or one-for-one with wheat flour in other recipes. I modified it by eliminating the oil, replaced the potato flakes with mashed potatoes, reduced the sugar by half and the salt by two thirds. I may eliminate the salt altogether next time. Be sure to line your pans with parchment paper all the way up the sides!

The flour mix is 7.5% flax seeds (1 cup flax seeds in 13.25 cups flour mix) and the bread recipe contains another 1/4 cup flax seeds. If I did the math right, that works out to 1/4 cup flax seeds per loaf.

Its not whole grain, but for a gf bread recipe, not too bad at 25% potato/tapioca starch. This definitely helped my low-BMI son put on some weight so definitely not recommended for folks trying to lose weight! :)

Update: I made my first bread. I used stoumi's recipe as I had most of the ingredients:) I ground brown rice in a coffee grinder and then used a sifter. It turned out really good. Most likely I will just break off pieces.. as it is difficult to slice without getting somewhat crumbly.This morning I just defrosted some strawberries in a cup and put some pieces of the bread in. In the future hope to make it with gaba rice.
