Anyone have a good cookie recipe to share? I've been experimenting a bit lately and haven't gotten it quite right yet. I'm the original cookie monster and am in need of a healthy cookie fix. Thanks!

I haven't tried these but in my file.

Banana cookies:

1 cup rolled oats
1 cup rolled barley
2 mashed bananas

Mix all together, add a little water if not moist enough, and make into cookies and bake on baking paper at 180 celsius or 350 fahrenheit for about 15 minutes. To conserve energy I actually turn the oven off after 10 minutes and leave them another 10 minutes in the residual heat.

I made this cookie for breakfast a couple of weeks ago.

1/2 cup oats
1/2 cup applesauce
2 T. of whole wheat flour
1 T. sugar

Just mix it all together, make small cookies, and bake at 350 for 10 minutes. I made 6 bite size cookies.

If you don't want to mess with making date syrup (though it's very easy), you can probably just sub in any liquid sweetener like honey/agave, though the recipe will probably end up tasting much sweeter than mine did. The dates add sweetness, but not the kind of sweetness that zings your tongue (IMO).

Also, I make these oatmeal bars for my husband and I think they could easily be dropped on a parchment-paper-covered cookie sheet and baked for about 10-20 minutes at 375 as cookies instead. They are healthier than the recipes above (less refined as they don't use flour, juice etc., but still calorie dense)

For me, it is key to use lots of vanilla and spices, and use fruit (very ripe bananas, dates etc.) as sweeteners to keep things healthy.

In a medium bowl sift:
2 cups whole wheat pastry flour
1 teaspoon ginger (ground)
1 teaspoon cloves (ground)
1 teaspoon cinnamon (ground)
1/2 teaspoon salt
2 teaspoons baking soda
In a large bowl mix:
1/4 cup + 2 tablespoons Wonderslim Fat & Egg Substitute*
1 cup Sucanat**
1 ½ tablespoons water
1/4 cup molasses ( Grandma’s is my favorite!)

Add the dry ingredients to the wet and mix thoroughly. Chill the dough before handling further.
Pre-heat oven to 350 degrees and line cookie sheet with parchment paper or use a non stick pan.
Roll dough into small (1") balls (a melon baller works well!)
Sprinkle some sugar or Sucanat on a plate and roll the balls in it. Place 2 inches apart on the prepared cookie sheet and bake at 350 for about 10 minutes (cookies will puff and then collapse). Let rest for a minute or 2 and remove to a cooling rack.
Makes about 3 doz.
*Note: Wonderslim is now difficult to find. It’s made from prunes. You can substitute pureed baby prunes, or you can puree some dried prunes and water in a blender.
**Sucanat can also be difficult to find. Rainbow Market no longer carries it, but they have Rapadura sugar, that is a good substitute.

Rip Esselstyn has a great recipe for choc chip cookies in the Engine 2 book. They're pretty high in sugar (1 1/4 c brown sugar in the recipe), but very good!

I have an AMAZING cookie recipe, it is oil free but it does have peanut butter. I use chocolate chips which are obviously not oil free but you could certainly leave them out.

Brown rice syrup helps make oil free cookies have that chewy texture. I use applesauce, peanut butter, brown rice syrup, turbinado, oats, either whole wheat pastry flour or gluten free flour blends, vanilla, baking soda and salt. I add chocolate chips but you could certainly leave them plain or use raisins, currants etc... too.

I'm not sure if anyone wants the recipe as it does have peanut butter but if interested let me know I'd be happy to post it.

Chocolate chip cookie

**IF you don't need gluten free cookies you can substitute whole wheat pastry flour for the: sorghum, brown rice flour, tapioca and coconut flours. Just be VERY careful that you barely mix the whole wheat pastry flour just until dough forms, in fact it is best to stir it in, because if you activate the gluten by over mixing the cookies will be more like cake cookies!!!

1/3 c. applesauce
1/2 c. brown rice syrup [can use maple syrup]
3 Tb. peanut butter
1/3 c. turbinado sugar
1 c. sorghum flour
1 c. brown rice flour
1 Tb. tapioca flour
3 Tb. coconut flour
1 Tb. flaxmeal
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
1 1/2 c. chocolate chips

Preheat oven to 350. Mix applesauce, rice syrup,i peanut butter and turbinado until well combined. Add the flours and flaxmeal and mix until well combined. Dough will be soft, add remaining ingredients and mix well. Spoon batter into a canning jar lid ring and press to make perfect circle cookies. Place cookies on a baking sheet and bake for 8-10 minutes.

Enjoy.

I also make ice cream sandwiches with these cookies by putting banana ice cream in the center, my kids love that!

Healthy Cookie Recipe
An easy healthy cookie recipe with all good ingredients! No white flour, no sugar, no eggs or butter, yet delicious!

1 ripe coconut grated
1 cup peanuts coarsely ground
1tbsp sesame butter or peanut butter
¼ cup raisins
½ cup jiggery sugar or raw palm sugar
Enough whole wheat flour to make the dough a rollable consistency

> You just knead the mixture into dough adding wheat flour as required to make the dough. Taste for the sweetness and add more jaggery if required.

> Roll into ½ inch balls, flatten and put on a baking tray. No greasing of the tray is required. Place it in an oven at 250 degrees. Turn over when it is lightly brown and bake the other side. Allow them to cool, and enjoy!
