While there are 3-2-1 oil-based dressings, you probably want Esselstyn's. Here's another thread--
In case you haven't tried it, this is from the Prevent and Reverse Heart Disease book by Caldwell Esselstyn. It is SO good! I use Ortalli balsamic vinegar, Inglehoffer mustard, and agave syrup. The "parts" are by volume, eg, tablespoons. My husband loves this!
3 parts vinegar
2 parts prepared mustard
1 part maple (or agave) syrup
( I also add 1.5 parts water)

The only caution is that prepared
mustard can be pretty high in sodium
. It might be worth experimenting with mustard powder and increasing the vinegar.
