 Post subject: Smoked Mac & Cheese with Broccoli

I have been searching for a mac & cheese recipe that didn't use some vegan butter or oil. Not easy by any means. I found a great recipe a few days ago on a Facebook site, which I wrote about. After entering the ingredients into Spark Recipes the calories and fat were way too high! Still, the recipe looked good, but had to pass.

Tonight I figured I would make my own. So using this cheese sauce recipe, I boiled up some organic brown rice pasta fusilli and steamed some broccoli. I added a few dashes of smoked paprika. The result:

I thought it had a pretty good taste, all things considered. If I would not have added so much paprika, my son would have eaten it all down, but it was a bit spicy. You can read the short recipe here. Enjoy. Modify. Eat.

I had this last weekend and it was delicious. I added mushrooms and didn't use the Braggs/soy sauce in the cheese sauce and it was still excellent. Mac & Cheese is a huge comfort food for me and I will recommend this recipe to everyone looking for a substitute. Thanks for the recipe (and picture)

That sounds yummy! I have cooked chickpeas in the fridge. Do you think they would work in place of the white beans?

kc42, yeah the should. I usually use whatever beans I have in the pantry, usually they are a white bean.
