I'm looking for some kind of substitute for butter to put on my home-made, oil-free, whole-wheat bread I make in a bread machine. It's the ONE thing I really do miss being a McDougaller--soft melting butter on fresh warm bread from the oven (or machine). Mmmm.........

I do use things like mashed baked sweet potatoes or bananas, or for not-sweet, I'll use mashed avocado or even peanut butter. But the last two are obviously very high-calorie, and the first two are sweet.

I'd love to find something like butter that isn't butter--- a semi-neutral taste that will add some moisture but not a ton of flavor. After all, the bread itself is so tasty. I don't want a sandwich spread, but something to put on just the bread, out of the oven. Hummus is the only other thing I can think of, but I'm only lukewarm on hummus for this purpose.

By the way, I'm not on MWL and can eat bread.

What do you use to substitute butter on your bread :?:

I usually eat bread plain when I eat it, so will be of little assistance.

However, in Jo Stepaniak's book The Ultimate Uncheese, she has a Chick cheeze recipe that is sort of like crock cheese that is very good, and sometimes I'll smear that on. For an even more mild, unassuming flavor, she has cream cheese-type recipes that I have never tried, but since everyone's tastes vary, it might be just the thing for you. (Just leave the oil out of her recipes. Sometimes a little water can be added if thinning is needed.)

How about making a spread with white beans? It would be less hummus tasting and you can season as you wish. Maybe with garlic or scallions. If you want it plain and simple, don't season at all.

I like Bryann's Corn Butter recipe that is in her cookbook (doesn't have coconut), but here is her similar recipe that is on her blog: http://veganfeastkitchen.blogspot.com/2 ... enman.html

The one in her cookbook (Almost No-Fat Cookbook, I think) is made of silken tofu, corn flour and some seasonings. It really does taste like margarine (albeit the cheap kind).

Roasted garlic! It has the same consistency as butter, and it's soooo delicious!

A spread like hummus made with roasted garlic and white beans. I used a recipe from Veganomicon but left out the oil.

In Dr McDougalls book, 12 steps, there is a recipe for wholemeal toast and corn butter. The spread is made from cooking cornmeal, lemon juice and water. I would like to know if anyone has made this and if it was nice as I will have to buy cornmeal in bulk from Amazon to try it out. I like the idea of trying a silken tofu spread though, thanks for that recipe.

I came on to suggest roasted Garlic but Vanilla Orchid beat me to the punch. If I put anything on bread it's roasted garlic. It's the secret of my great strength!!!
