I am having a difficult time finding the coconut extract that is being suggested for use in things like curries. I looked at the Penzey's site, they don't offer it. I can't seem to find it in a grocery store. Help please! Who makes it and where might I find it?

McCormack makes one, Durkee probably does, too. I find it in the spices aisle in the same place as the vanilla extract, lemon extract, etc. It's just a little bitty bottle.

Well, if you can't find it anywhere, you could buy a coconut and some vodka and make your own.

In the regular grocery stores, various extracts and flavorings will usually be near the spices. Have you check the Asian market? You might find coconut extract there. Amazon has many brands of coconut extract listed, including McCormick imitation coconut and Capella flavor drops coconut concentrate. They have a pretty extensive offering of Bakto flavorings, including coconut.

King Arthur also has a artificial coconut flavoring.

I find it in the grocery store with all the extracts (vanilla, almond etc). It's in the aisle with spices and baking supplies.
Amazon sells it.
You could also look for a store in your town that sells baking supplies, or maybe a bulk store.

I get the Frontier kind. I think there's oil in it though, but it's natural and organic. It's a trade off and since I would only use a minuscule amount a few times a year, I don't mind.

Now, does anyone have a good recipe for a curry dish using this extract? I have a hankering for something of this nature and am having a hard time finding a simple recipe. I would like to make it without tomatoes though....any suggestions?

Seems to me I've seen something on the Fat Free Vegan blog site, but I can't find it now. Maybe here as well???? I had to get the idea somewhere........

I believe Mary has posted a couple of Thai style curries using coconut extract and soy milk to replace the coconut milk. I tried one once and wasn't impressed. I should try again and see if I can tweak it, because I do love Thai green curry.
