 Post subject: Is it ok to combine some overt fat with starch?

Hello,

I have a question regarding mixing some overt whole fat with starches like potatoes and white rice.

My main staples are potatoes, rice and vegetables. However my daily fat percentage is low a bit for about 4% of calories consumed without any overt fat. I want to add 20g of blended flax seed to get more EFA's and rise fat percentage to 8%.
How would it be better-mix flax seeds into my starch meals or eat them separately at the evening as the last food for the day?

Does mixing a little overt fat with high GI starches slows glycemic response or have some other effects like effect on starch digestion, blood sugars etc?

Hi. I can't imagine eating plain flax seeds at the end of the day, or at any time actually. :lol: You will probably want to grind them into meal anyway. Otherwise they'll probably just go through you undigested. I don't know how they'll affect your blood sugar response. The amount of sugars in 2 tablespoons of flaxmeal is very low. Many people who follow McDougall eat it daily. Some like to add it to their oatmeal. You can also sprinkle it on your salad.

What is an "overt" fat? When I google it, the only references are on raw boards. There don't seem to be any other uses of the term. (And it's not one used by Dr. McDougall.)
