 Post subject: Need binder for quinoa sushi

I'm going to try quinoa sushi but the binders in recipies include either tahini or soy butter and I would like no-oil. I found one using rice vinegar, but it needed to be made warm or it would fall apart. If you can think of any binders consistent with no-oil and plant-based, I would appreciate the input!

what about kuzu?

I have used it as a binder and a thickener; works great. It seems like it could be a great binder, too.

Binders? I keep telling myself I'm going to make sushi rolls some day. Hasn't happened yet. :duh: Keeping my sushi ignorance in mind, isn't the main binder in typical sushi the rice itself? The vinegar is for flavor. The starch in the rice makes it sticky.

Here's a quinoa sushi roll that doesn't use binders. She doesn't even use seasoned vinegar.

Look at you with a link and all! Great idea. Searching Kuzu as a binder I found a list of binders and thickeners.

Yes, sticky rice is the binder. I understand though that they add some other stuff too. But apparently quinoa is not sticky enough. I saw some of the blog stuff like you found, but can't access blogs because of my filter. I'll have to check this out when I am filter-free!!!

I make sushi using short-grain brown rice (not sticky rice) with a little rice vinegar added. No "binders." Works great. Can't see why quinoa would be any different.

Try it first.

Flax seed is oily and on my banned list. I couldn't find info on the nutritional content of this "goo" so I don't know if any of the oil is in the resultant goo.....

Okay, I accessed the site. Interesting. Some sites say it's not sticky but this recipie says it is. Perhaps it's in the way it is prepared. I will have to try and see for myself. Just didn't want my first batch to fall apart. Definitely the nori should go on the outside!

I have read on Just Bento that you can blend half of your cooked quinoa and then mix back together.
