Having got a little tired of standard oatmeal every morning for brekki...I decided to try something different.
I use a tiny bit of Okara sometimes from soya milk maker as a base, or a mashed ripe banana. These work like an egg to bind.....throw in oatmeal, other flakes like barley or rye, some raisins or chopped dates to sweeten....maybe a small amount of organic spelt flour (but not always)....
Mix it all together very quickly and the oats take up any moisture. I then add some jumbo oats for crunch, and to make sure the main ingredient is the oatmeal and spoon the mixture into my cup cake maker....and in a few minutes I have really tasty muffin style crunchy oat buns.
It is great fun experimenting with apple sauce, cranberries, honey or anything you have to hand really.
They are simply delicious, and can be taken as a snack on the run too.
Nicest hot from the tin, but can also be made the night before....*hint* when they are cooked let the tin cool and they simply pop out non stick style....
