BORLOTTI BEAN GOULASH
Serves 3
1 onion, chopped
1 carrot, chopped
1 red pepper, chopped
2 sweet potatoes, peeled and chopped
1 x 400g can of borlotti beans
1 teaspoon of caraway seeds
½ teaspoon cayenne pepper
½ tablespoon paprika
1 tablespoon tomato puree
½ stock cube
½ pint of boiling water
1. Using a large saucepan, sautē onions, carrots and caraway seeds gently in a small amount of water for 5 mins, until onions are transparent.
2. Add paprika, cayenne pepper, red pepper and sweet potato, cook for 3 mins, keep stirring, add a little more water if necessary.
3. Add water, stock cube, tomato puree, drained can of borlotti beans and simmer with lid on for 20-30 mins until veg are all tender.
4. Serve with brown rice, pasta, or cous cous and a green salad.
I always double up this recipe and freeze in 1 person portions so I can just get it out when I need it.
