I am nuts over steaming a combo of cauliflower, broccoi and cut carrots, then sprinkling them with nutritional yeast, and roasting them.
I can't believe how much i lOVE eating them

SO>>>here's the question..can I eat too much of them? I can easily eat 4 cups a day with no problem. I prefer to raw, can't find a way to get down greens without slathering them in some kind of awful dressing...so I do eat them, just not everyday, with apple cider vinegar or Bragg's.

Other ymmmmy veggie ideas? :idea:

Yeah I have been eating more veggies recently and use Bragg's Liquid Aminos and apple cider vinegar together quite a bit. If I want to spice it up, I drop in a few squirts of Sriracha Hot Sauce.

Fluffyish007, also big fan of cooked veggies.

Twice in the last two weeks have made an Italian cauliflower sauce, which is browned-onion based sweetened with fresh grapes or raisins. Good over your favorite starch, whether whole wheat pasta, brown rice or potato.

1 onion, sliced
1 cauliflower, cut small
1 cup veggie stock
1/2 cup golden raisins, soaked (or 20-30 fresh whole seedless grapes)
1/8 tsp salt
1/8 tsp black pepper

Another good cauliflower recipe is Aloo Ghobi, which is cauliflower and potato Indian curry. Good over brown rice.

For salads, I usually don't do green salads, but do lots of cucumber and tomato salads, with an occasional cole slaw.

I don't think you can eat too much, as long as they are whole foods.

4 cups of a mix of broccoli, cauliflower and carrots is not excessive.
Broccoli, especially has a nutritional profile that is similar to many greens so if you are eating plenty of broccoli there is not absolutely necessary.
I think being a broccoholic is better than being a chocoholic!

Pumpkin Pete, lol!! yes, I am adjusting to being a broccoliholic!! I am confused though...I hear "eat all you want" with whole foods but then I see "don't have more than a cup of beans a day", or rice cakes are a high density food.

I guess the scale will tell me if I"m on track. I just can't BELIEVE I'm excited about vegetables. What a kick!!

This is the first time I really feel like I've found a way to eat I can sustain. It's so PEACEFUL.

I love my cauliflower but if I ate 4 cups (even mixed with broc and carrots) I know I'd get thrown out of work. I get such bad gas with it.
