Rice with Almonds and Raisins
1/2 c. slivered almonds 3 Tablespoons lemon juice 2 Teaspoons lemon zest 1 3/4 c. vegetable broth 1 cup brown rice 1/4 cup chopped onions 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/3 c. water 1/2 cup golden raisins 1 cup cooked frozen peas 5 Tablespoons honey (optional)
Toast almonds at 300 degrees in oven until slightly brown (10 minutes more or less depending on your oven). Combine lemon juice, lemon zest, rice, vegetable broth and spices. Heat until liquid is absorbed. While rice is cooking, plump raisins in a pan of hot water. Cook peas according to package directions. Add raisins and peas to cooked rice. Stir in almonds. Serve.
