 Post subject: What's for lunch today?

I love making Jeff's SNAP meals, but I usually use fresh veg as I enjoy them more. So easy for me to throw together in the morning to take to work. Breakfast is simply leftover stirfy from last night...brown rice and a boat load of veggies like peppers, carrots and brocolli.

Today for lunch is:
Kale and mushrooms cooked in salsa with quinoa and pinto beans. Yummy!!

What are you having for lunch today?

I've been bad for lunch because I am at work. If I don't grab something leftover from the night before I usually don't eat, which makes me quite hungry by the time I get home. Yesterday it was Tabouli for lunch and today a couscous salad I threw together last night with apple cider vinegar, cucumber, jalapeno pepper, cilantro and two tomatoes with some Sriracha Hot Sauce mixed in. I also have two apples today.

I usually cook a big dinner and eat the leftovers for my lunch the next day. So today it will be leftover Texas Vegetable Casserole from the Maximum Weight Loss book. The only fault I have with those recipes is that some of them are huge. Mary must have made them when her kids were still at home.

p.s. This casserole has everything but the kitchen sink in it: eggplant, zucchini, tomatoes, potatoes, leeks, onions, bell peppers and vegetable broth.

I had sweet potato chili over brown rice for about the 4th time this week. It sure is good, but I'm glad to have finished it so I can have something different!

I'm strange, I know, but I never get tired of things I like. I make a HUGE pot of soup once a week and eat it probably 5 out of 7 evenings for dinner and never ONCE get tired of it! Good thing, I guess! :)

SNAP of turnip greens with diced turnips, mixed vegetables (corn, peas, carrots, green beans, lima beans), brussel sprouts, diced no-salt tomatoes, low-sodium salsa and nutritional yeast. Container of raw veggies (sugar snap peas, baby carrots, jicama). Navel Orange. One brazil nut (for selenium). Tangerine Zinger herbal tea.

Why the Brazil nut? Isn't there selenium in other stuff? Are you low in selenium??

Am I clinically low? Who knows. I've never requested a blood test for selenium. But I've been logging my diet with the CRONometer for weeks now, and getting enough selenium seems to be a problem. I have watched Jeff's new video twice and yes, I understand there are other sources of selenium. But after giving it some thought, I have decided that FOR ME the cheapest, easiest, least annoying way for me to get 100% of my RDI for selenium is to eat one raw brazil nut every day. I'm not overweight, the fat content of my diet is still below 10% and I LIKE brazil nuts. If, in addition, the fat in the nut helps improve the absorption of the antioxidants and nutrients in the vegetables I'm eating for lunch, that's all to the good.

I was just looking at that recipe the other night and was thinking about making it this weekend.

Yeah, I wish this were the case where I work. Unfortunately the office is located quite near to Chinatown in downtown Oakland, CA and EVERYTHING that comes into the office seems to be fried. It's no wonder my waist line continued to expand. All the lunch we went our for was NOT McD approved.
