How in the world did I miss this post? I will definitely give these potatoes a try. They look fabulous! :)

These came out great! I tossed in some thyme for seasoning. I found that 30 minutes at 450 degrees was good. I think any longer and they would have burned.
One hop at a time!

Has anyone tried this recipe with unpeeled potatoes. If the peels aren't too thick, I don't peel. The chunks would still have sides without peel. My grandsons and husband will probably love these. I would think these and bean burgers would make a super meal. Thanks for sharing the recipe!!!

Had these last night and we loved them. I used chickpea flour, because that was what I had, and did them in the toaster oven. They cooked in about half the time.

My husband made them with me and he said that he liked them better than the ones he used to make! (He used to make them tossed with olive oil and they were delicious.) Him liking them better is HUGE!

So thanks so much for the recipe, they will be a regular.

PS We agree that the recipe makes them appear to be an ordeal, but they are easy.
