Quickest Strawberry Vinegarette:

1/2 cup balsamic vinegar
3 large ripe strawberries

Whiz in blender.

Superb! Use on salads or anywhere else. Also good as a marinade. It gets better and better after a few days.

I have done a variation on this using rice or wine vinegar and a smidge of strawberry preserves. It would work with any kind of fresh fruit or fruit preserves or jam, I think--be careful of sugar in the preserved fruit, of course. Raspberry would be good. I haven't tried it but maybe mustard would be a good addition too.
