I had a bag of mixed 5 or 7 bean soup with some barley. Was about a pound and a half of the mix. I soaked the beans and barley overnight.
I used one qt of organic vegie broth and six cups of water. Added two cups diced carrots, two cups diced onions, one sliced leek, 1+ cup sliced celery, 1/2 cup chopped sundried tomatoes (packed in oil brand, but drained them well)...
Added the bean/barley mix... added a teaspoon or two of sea salt and an organic vegie pepper blend spice ....
It took a little more than an hour for the beans to cook... just waited till the beans were tender.
It got pretty thick so I just added about a half quart more of the organic vegie broth...
Really tastes good.
