I freeze leftover lite coconut milk all the time and it always defrosts ok.

Another trick is to use your favorite non-dairy milk and a few drops of coconut flavoring or extract for the flavor without the fat of even the lite coconut milk. This way you also don't have to worry about leftovers.

I can't take credit for this sandwich recipe, as I got it from a good vegan cookbook for two. And it really isn't a 3 ingredient receipe, but here it is anyway:

Pickles, lettuce and tomato sandwich or PLT's

lettuce (we like green leaf on this sandwich)
sliced tomatoes
pickles (we like the sandwich slices)
vegan mayonnaise or tofu mayonnaise
whole wheat bread slices

spread your bread with the vegan mayonnaise. Put on as much lettuce, tomatoes, and pickles as you want. Slice the sandwich and enjoy! This sandwich is great with 12 grain whole wheat bread.

I remember this recipe from the 10 day program...

Hummadillas

-whole wheat tortillas
-hummus (your favorite)
-salsa (jarred or fresh)

Spread hummus & salsa evenly over 1/2 of a whole tortilla, then fold over. Heat in a dry non-stick skillet until tortilla is lightly browned on both sides.
I usually add shredded lettuce inside after they've cooled a bit.

mmmmm...I made these with corn tortillas the other day and added chopped green onions inside! Yummy!

Curried rice and Split peas

1 1/2 cups brown rice
1 1/2 cups yellow split peas
5 cups water
Yellow curry powder- to taste ( I usually start with about a tablespoon and add more if needed once it is cooked.)

Combine in pot and let cook until water is absorbed. Usually about 30-40 minutes. If you want the dish creamier you can add more water and cook a little longer. I prefer it more pilaf style. This makes ALOT. I usually have enough for dinner and about I put the leftovers in 16 oz jars in the freezer. I usually have 3-4 jars of leftovers. It is great for breakfast as I just take the lid off the jar and microwave for three minutes.

Optional ingredients
Kale or other greens
Mushrooms
Asian sweet chili sauce
peppers
onions

SMASHED YUKON POTATOES, BEANS AND VEGGIES

3 small Yukon gold potatoes
1 can chopped tomatoes and okra
1 can (well rinsed and drained) black or garbanzo beans

Microwave the taters. Cut randomly and place in non-stick pan. Smash w/ fork. Cook on medium until browned; turn and brown other side.

Dump in the can of tomatoes and okra. Dump in the can of (drained) beans. Add garlic and balsamic vinegar. Cook on low-medium until warm. Serve.

It's amazingly good and I think I made it up! ;) Substitute other veggies if you like, but I think you need the canned tomatoes for liquidy goodness.

I use to love baked potato and triple succotash on top because of the liquid. It was a favorite quick meal.

Cold Carrot soup

This is simple, quick and easy.

I use about 2-3 carrots per person. Slice and microwave in a little water. I microwaved one serving for 6 minutes. Then rinse with cold water and throw in blender. Add 1 cup or almond or rice milk or a couple spoonfuls of mayonaisse substitue and 3/4 cup water. Then add seasoning, I use either ginger and fresh garlic, basil, or dill plus a little salt. Blend until smooth.

I made this for lunch today and I practically licked the jar clean!

Colcannon

4 potatoes
1 bunch kale
soymilk

Peel potatoes and cut into chunks. Cook in water until soft. Drain. Mash, using the soymilk.

While the potatoes are cooking, remove the tough center stem of the kale. Rinse and then chop into small pieces. Cook in a little water until soft and wilted. Drain.

Stir the kale into the mashed potatoes.

I season these with a little salt and pepper.

Serve with White Beans & Carrots for a satisfying meal:

16 oz cut peeled carrots
1 can white beans, any kind, drained and rinsed
1/2 tsp dried thyme
1/4 tsp dried rosemary

Cook the carrots until tender in a little water. Drain lightly. Stir in everything else.

This has been my breakfast lately.

Put a little water in a non-stick pan.
I peel 2 yukon gold potatoes. I julienne them on my mandoline.
Put those in the pan with a little salt and pepper. I chop up a whole yellow onion and put that in the pan. A little salt on top of the onions, this helps get the moisture out. Between the moisture in the potatoes and onions, I usually don't have to add any more water.

When the potatoes are almost cooked, I take a big slice off a head of red cabbage and cut it up. Add that to the pan. When the cabbage is heated, I add some teriyaki sauce, very little of it though. I use McDougall legal Annie Chun's Teriyaki sauce. Very tasty stuff, if a bit expensive.

5 lb bag of potatoes, peeled and cut up
1 bunch broccoli, cut up or one bag frozen broccoli
peppers, spicy or sweet, and onion, cut into chunks

Bring all to boil, cook about 12 minutes or until potatoes and broccoli stalks are done. Drain and mash with a dusting of garlic powder, couple handfuls of baby spinach and chicken seasoning (a little sage, thyme and marjoram).

Here's a recipe my mom used to make. It has only three ingredients, and I believe they're all McDougall.

Rice
Black Beans
Salsa

Cook the rice. Put the salsa and black beans in a saucepan and heat on medium for 5-10 minutes. Make a bed of rice, and cover with the beans and salsa. There are no fixed amounts, so just vary for your preferences. I believe the ratio my mom uses is around 2 parts rice to 1 part black beans and 1 part salsa. You can also add cayenne pepper if the salsa alone isn't spicy enough for you.

Enchiladas

Corn tortillas
Fat Free refried beans
Fat Free or Low Fat enchilada sauce

Top with salsa.. oops that's 4 ingrdients. Doh!

1-2 russet potatoes (skins on), diced
1-2 carrots, cut in rounds
1/2 pound frozen broccoli

Cook all in pot with a couple of inches of water.

I've been eating this once a day lately. Its fast, easy, and warm! :)
